>>> Hwanamjeong Pork Soup with Rice - Myeongji Branch <<<
Our Hwanamjeong’s main store is located in Choeup-dong, Busan, and now we’re excited to announce the grand opening of our new Myeongji branch!
Over the past year, we’ve been preparing by cooking broth and boiling meat ourselves at the main store, all while serving our valued customers. Finally, in June 2024, Hwanamjeong Myeongji Branch is officially open!
Busan is famous for its many pork soup with rice (dwaeji-gukbap) restaurants.
Busan-style dwaeji-gukbap is known to have originated after the Korean War as a meal for refugees. There are different variations:
Shinchang Market-style uses clear broth made from pork meat, similar to beef bone soup (gomtang).
Miryang-style uses pork bones to create a rich, milky-white broth.
At Hwanamjeong Myeongji, we serve Miryang-style dwaeji-gukbap with a deep, flavorful broth simmered from marrow bones from early morning until late at night. Our tender and savory pork jowl slices are boiled three times a day, using only 100% pork jowl meat. We provide a clean, separate style of gukbap (rice and soup served separately).
@@@ The Five Unique Qualities of Hwanamjeong! @@@
We use premium pork jowl, a high-quality special cut.
Over 50% of the fat and outer parts are discarded to provide only the lean and core cuts.
We serve a healthy lotus root and sea bamboo shoot tea.
This tea purifies the blood, is rich in antioxidants, offers various health benefits, and has a savory, pleasant taste.
We enhance the flavor with Busan pollack roe and Gijang kelp vinegar.
By using local Busan ingredients, we ensure a healthy and authentic taste.
Our suyuk (boiled pork slices) and bossam menus come with a special, traditional "Maribo Bossam Kimchi."
Although it requires a lot of effort to make, we insist on serving it to our valued guests.
We use 60kg of marrow bones to create a single batch of soup.
We are generous with our bones to achieve a thick, rich, milky-white broth.
Hwanamjeong Myeongji, run by a passionate young couple dedicated to pork gukbap, strives to become a Myeongji landmark that brings positive influence to the local community. We promise to pour our hearts into every bowl, focusing on sincerity over profit.
